The food service sector – from fast food, through street food to fine dining – is thriving and constantly evolving. In this session the speakers will explore the sector’s offerings, value and the opportunities for the farming sector.

The opener will be from Simon Stenning, essentially a highly accomplished market insights man; he will paint the fascinating picture of the changing consumer trends and what this means for producers looking to supply food service. Simon will be followed by Guy Watson, the founder of Riverford Organics; Guy’s business has grown and changed over the years since it was founded and now delivers 47,000 boxes a week as well as restaurants.

The final speaker, sprinkling her rich experience on the conference, is Sarah Mackie, a farmer’s daughter who in her 11 years with Tesco set up the ‘local buying’ office. Sarah now works for Brake Brothers, a food service supply business as their procurement director for Scotland.

This session is sponsored by M&S and will run from 13.30 on 4 January 2017.
